Ingredients

Season the chicken

  • 250g of chicken breast
  • 1 tbsp of water
  • 1 tsp of cornstarch
  • 1 tsp of salt
  • 1 tsp of oil

Soup

  • 2 tbsp of sesame oil
  • 5 cloves of garlic, minced
  • 4 cups of chicken stock
  • 1 can of sweet corn
  • 1 tsp of turmeric powder
  • 1 tsp of salt
  • 1 tsp of white pepper
  • 3 tbsp of cornstarch + 2 tbsp of water, to make a slurry
  • 4 eggs, whisked
  • Noodles (optional)

Garnish

  • Spring onions
  • Sesame oil

Instructions

  1. In a bowl, combine the thinly sliced chicken breast with water, cornstarch, salt, and oil. Mix well and set aside to marinate for about 10-15 minutes.

  2. Heat sesame oil in a large pot over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.

  3. Pour in the chicken stock and bring it to a gentle simmer.

  4. Add the canned sweet corn kernels to the pot. Stir well and let it simmer for another 5 minutes.

  5. Season the soup with salt and white pepper according to your taste.

  6.  Gradually pour the cornstarch slurry into the soup while stirring continuously. Allow the soup to thicken slightly.

  7. Once the soup has thickened, add the seasoned chicken slices into the pot. Let it cook for about 5-7 minutes or until the chicken is fully cooked through.

  8.  Slowly pour the whisked eggs into the soup while stirring gently. This will create delicate egg ribbons throughout the soup. Cook for another 1-2 minutes.

  9.  If desired, you can cook noodles separately according to package instructions and add them to the soup just before serving.

  10. Ladle the chicken sweetcorn soup into serving bowls. Garnish with chopped spring onions and a drizzle of sesame oil on top.

  11. Serve hot and enjoy the comforting flavors of this chicken sweetcorn soup!
