Ingredients

Scale
  • 160g of pasta
  • 1.5 tbsp of chili oil
  • 1.5 tbsp of olive oil
  • 1 tbsp of butter
  • ½ onion, finely chopped 
  • 4 cloves of garlic, crushed
  • 1 tsp of chilli flakes
  • 90g of tomato paste
  • 4 tbsp of vodka 
  • 3/4 cup of heavy cream
  • 1/4 cup of grated parmesan cheese

Instructions

  1. Slice up your garlic and onion. Set aside.
  2. Cook the pasta to Al Dente in hot boiling water for 8 minutes.
  3. In a pan, heat the olive oil and chili oil over medium-low heat.
  4. Add onion and cook until softened and translucent.
  5. Then, add garlic and chili flakes. Cook until fragrant for 30 seconds..
  6. Stir through tomato paste and cook until it is caramelized for a few minutes.

7.Next, add the vodka and cook off the alcohol. 

8.Add in heavy cream, quickly stir to combine until the sauce thickens for about 4-5 minutes and season the sauce with salt.

  1. Add pasta back to the pan followed by pasta water and give it a good mix.
  2. Add cold butter to the pasta and this will thicken the sauce more and make it glossy before adding parmesan cheese to finish the dish.
  3. Plate your pasta and garnish with more parmesan cheese and chili oil. Enjoy!
