Ingredients

Scale
  • 3 chicken thighs
  • Salt and pepper, to season
  • Cornstarch

Cajun cream sauce:

  • 2 tbsp of butter
  • 1 onion, chopped
  • 4 cloves of garlic, minced
  • 1/2 cup of chicken broth
  • 1/2 cup of heavy cream
  • 1 cup of parmesan cheese
  • 1/2 lemon juice
  • A handful of spinach

Seasoning for the sauce:

  • 1 tbsp of Cajun Seasoning
  • 1 tsp of paprika
  • 1 tsp of chili flakes
  • 1 tsp of Italian seasoning

To garnish:

  • Chives
  • Chili flakes

Instructions

  1. Season the chicken with salt and pepper. Coat the chicken with cornstarch and shake off the excess. Set aside.
  2. In a pan, heat the oil over medium-high heat. Add the chicken skin side down and fry each side for 4 minutes or until golden brown. Set aside.
  3. In the same pan, melt 2 tablespoon of butter. Add the onion and garlic. Sauté until the onion is translucent.
  4. Add in Cajun seasoning, paprika, chili flakes and Italian seasoning. Sauté for 30 seconds or until it is fragrant.
  5. Add in chicken broth, heavy cream and stir until the sauce thickens. 
  6. Add in parmesan cheese, squeeze 1/2 lemon and give it a good mix until the cheese dissolves. 
  7. Add back the chicken and baste the chicken with the sauce.
  8. Serve with hot steamed rice and enjoy!
