For the caramelized onions:

  • 1 tbsp extra-virgin olive oil
  • 1 tbsp unsalted butter
  • 1 large onion, thinly sliced

For the ramen:

  • 1 tbsp olive oil
  • 1 tbsp gochujang (Korean chili paste)
  • 4 garlic cloves, thinly sliced
  • 10 shrimp, peeled and deveined
  • ¼ cup heavy cream
  • 2 ramen seasoning packets (from the ramen packs)
  • ¼ cup fresh parsley, finely chopped
  • 2 packs of instant ramen (e.g., Shin Ramyun)

For garnish:

  • Chopped chives
  • Grated Parmesan cheese
  • Chili oil

Instructions

  1. Caramelize the onions: Heat a pan over medium heat and add 1 tbsp olive oil along with 1 tbsp butter. Once melted, add the sliced onions. Reduce the heat to low and cook for about 30 minutes, stirring occasionally, until the onions are deeply golden and caramelized. Set aside.
  2. Cook the noodles: In a separate pot, boil water and cook the ramen noodles for 3 minutes. Reserve 1 cup of the noodle water, then drain the noodles and set aside.
  3. Sauté the shrimp and build the sauce: In the same pan used for the onions, heat 1 tbsp olive oil over medium heat. Add gochujang, sliced garlic, and shrimp. Cook until the shrimp are about 90% done.
  4. Finish the sauce: Pour in the heavy cream and return the caramelized onions to the pan. Stir well to combine.
  5. Combine everything: Add the cooked ramen noodles and chopped parsley to the pan. Toss everything together, adding reserved noodle water as needed to loosen the sauce. Mix until well combined and heated through.
