For the Chicken:

  • 500 g chicken thigh, diced
  • 1/4 cup cornstarch
  • Salt and pepper to taste
  • Vegetable oil for frying

For the Sauce:

  • 3 tbsp soy sauce
  • 2 tbsp hoisin sauce
  • 1 tbsp rice vinegar
  • 2 tsp sesame oil
  • 1/2 cup chicken stock
  • 2 tbsp brown sugar
  • 1 tbsp cornstarch

For Stir-frying:

  • 3 cloves garlic, minced
  • 2 tsp ginger, minced
  • 1 tsp chili flakes
  • 2 stalks green onions, sliced

Garnish:

  • 2 tbsp sesame seeds
  • 2 stalks green onions, sliced

Instructions

Prepare the Chicken

  • In a bowl, toss the diced chicken thigh with cornstarch until evenly coated. Season with salt and pepper to taste.

Fry the Chicken

  1. Heat vegetable oil in a large skillet or wok over medium-high heat.
  2. Once the oil is hot, add the coated chicken pieces in batches, ensuring they are not overcrowded.
  3. Fry the chicken until golden brown and crispy, about 4-5 minutes per batch.
  4. Remove the chicken from the oil and place it on a plate lined with paper towels to drain excess oil. Set aside.

Prepare the Sauce

  1. In a small bowl, whisk together soy sauce, hoisin sauce, rice vinegar, sesame oil, chicken stock, brown sugar, and cornstarch until well combined. Set aside.

Stir-fry 

  1. In the same skillet or wok used for frying the chicken, heat a tablespoon of vegetable oil over medium heat.
  2. Add minced garlic, minced ginger, and chili flakes. Stir-fry for about 30 seconds until fragrant.
  3. Return the fried chicken to the skillet.
  4. Pour the prepared sauce over the chicken in the skillet.
  5. Stir well to coat the chicken pieces evenly with the sauce.
  6. Cook the chicken and sauce mixture for 2-3 minutes, stirring constantly, until the sauce thickens and coats the chicken pieces.
  7. Garnish the General Tso Chicken with sesame seeds and sliced green onions.
  8. Serve hot with steamed rice or your favorite side dish.
  9. Serve immediately and enjoy your homemade General Tso Chicken!
