Ingredients

  • 1 tbsp olive oil
  • 1 tbsp unsalted butter
  • 1 large onion, thinly sliced
  • 3 cloves garlic, thinly sliced
  • 1 tsp ginger, finely minced
  • 2 tbsp white or yellow miso paste
  • 1 tsp soy sauce
  • 1 tsp honey or mirin
  • 2 packs Shin Ramyun noodles
  • 200 g shrimp, peeled and deveined
  • ½ cup heavy cream
  • ½ cup parmesan cheese, grated (plus extra for garnish)
  • Chives, finely chopped, for garnish
  • Chili oil (optional)

Instructions

  1. Caramelise the onion (set aside)
    • Heat olive oil + butter in a pan over medium heat.
    • Add onions with a pinch of salt. Cook slowly, stirring occasionally, until deep golden brown and sweet (10–12 min).
    • Set caramelised onions aside.
  2. Sauté aromatics and shrimp
    • In the same pan, add garlic, ginger, miso paste, soy sauce, and honey. Cook 1–2 min until fragrant.
    • Add shrimp and sauté until just cooked (2–3 min).
  3. Add cream and parmesan
    • Reduce heat to low. Pour in heavy cream and grated parmesan cheese. Stir until smooth and creamy.
  4. Add caramelised onions and noodles
    • Fold in the caramelised onions, then the cooked Shin Ramyun noodles. Toss gently until everything is evenly coated with the creamy miso sauce.
  5. Finish and serve
    • Plate the noodles.
    • Garnish generously with chopped chives and extra parmesan cheese.
    • Drizzle with chili oil if desired.
