Ingredients

Scale
  • 2 cups of day old white rice
  • 4 scallions chopped, whites and greens separated
  • 4 eggs large
  • 1 tbsp of soy sauce
  • 1 tsp of salt
  • 1/2 tsp white pepper
  • 1 tsp of chicken powder
  • 1 tsp of sugar
  • 4 tbsp of neutral oil

SHRIMP MARINADE

  • 10 shrimps, deveined
  • 1/4 tsp of salt
  • 1/4 tsp of white pepper
  • 1/4 tsp of baking soda

Garnish

  • Spring onion Chili Oil

Instructions

  1. Marinate the shrimps with salt, white pepper and baking soda for 10-15 minutes. Set aside.
  2. Heat 1 tbsp of oil over high heat and cook the shrimp until it cooked through and set aside.
  3. Heat another 3 tbsp of oil and sauté the scallion whites until fragrant.
  4. Add 4 beaten eggs and scramble together with the scallion whites for 30 seconds or until the eggs are about 90% cooked through at this point.
  5. Add the day old white rice, stir fry to break any lumps and make sure everything is coated with the eggs.
  6. Add soy sauce, chicken powder, salt, white pepper, sugar and stir fry until the rice grains are dry and separated.
  7. Add back the cooked shrimp and scallion greens and give it a final mix.
  8. Once it's done, enjoy!
