Ingredients

Scale
  • 2 packs of ramen noodles
  • 10-12 frozen dumplings
  • 1 tbsp of neutral oil
  • 3 cloves of garlic, minced
  • 1 tsp of ginger, paste
  • 1 tbsp of lemongrass, paste
  • 2 tbsp of Thai red curry paste
  • 2 cup of chicken stock
  • 1 cup of coconut milk
  • 2 tsp of fish sauce
  • 2 tsp of sugar
  • 4 kaffir lime leaves

To garnish:

  • Fried Shallots
  • Chili
  • Spring onion
  • Chili Oil

Instructions

  1. In a pot, heat 1 tbsp of oil over medium high heat. Add garlic, ginger, lemongrass and red curry paste. Sauté for 2 minutes.
  2. Add chicken stock, coconut milk, fish sauce, sugar and kaffir lime leaves. Stir until combined and bring the sauce to a boil and simmer for 10-12 minutes. Turn off the heat and set aside.
  3. Then, cook your wontons, veggies and ramen in hot boiling water.
  4. Plate your ramen in a bowl along with the veggies and wontons. Laddle the curry soup and garnish with fried shallots, chili, spring onions and chili oil. Enjoy!
