Ingredients

Scale
  • 4 cloves of garlic, minced
  • 1 tbsp of vegetable oil
  • 500g of hokkien noodles or egg noodles, fresh
  • 125g of pork belly, sliced
  • 10 shrimps, peeled and deveined
  • 1 cup of Chinese cabbage or Wombok, thinly sliced
  • 1/2 cup of Choy sum, roughly chopped
  • 1/4 cup of chicken stock unsalted

Sauce:

  • 2 tbsp of sweet soy sauce
  • 1 tbsp of oyster sauce
  • 1 tbsp of soy sauce
  • 1 tbsp of sugar
  • 1/2 tsp of white pepper
  • 1/2 tsp of salt
  • ½ tbsp of cornstarch
  • 1/4 cup of water

Instructions

  1. Blanch the noodles in hot boiling water for 30 seconds to loosen them up and set aside.
  2. Combine the sauce in a bowl and set aside.
  3. Then, heat the oil over medium-high heat. Add the pork belly and stir fry until brown around the edges.
  4. Add the garlic and prawn. Cook the prawn until they turn pink and are cooked through.
  5. Next, add in the noodles followed by the sauce. Stir fry for 1 minute until the sauce is reduced.
  6. Add the cabbage, Choy sum and chicken stock. Give it a final mix or until the sauce thickens.
  7. Garnish with fried shallots and enjoy!
