What’s Shrimp Fried Rice All About?

For those of you who might be wondering, Shrimp Fried Rice has deep roots in Chinese cuisine, particularly in Southern China. It was originally created as a way to use up leftover rice—talk about being resourceful, right?

Over time, it turned into the iconic dish we all know and love today. It’s become a must-have on Chinese restaurant menus and is now a staple comfort food all around the world.

The great thing about fried rice? It's super versatile. You can throw in pretty much anything—shrimp, veggies, eggs, soy sauce—the options are endless. The key is to use day-old rice for that perfect texture. Trust me, it makes a world of difference.

Ingredients You’ll Need for Shrimp Fried Rice

Here’s what you’ll need to make this quick and easy shrimp fried rice:

Main Ingredients

  • 2 cups of day-old white rice: This is your foundation, and trust me, using day-old rice is key for that perfect texture. Fresh rice is too soft and sticky, but when it’s been chilling in the fridge overnight, it firms up and fries up beautifully. So, don’t skip this step. It makes all the difference!
  • 4 scallions, chopped, with the whites and greens separated: I love scallions in fried rice because they add a nice crunch and freshness. You’ll use the whites for that rich flavor base, and the greens at the end for a fresh, vibrant finish. It’s like giving your dish two different layers of flavor.
  • 4 large eggs: You can’t have fried rice without eggs. The fluffiness they bring is just chef’s kiss. Scramble them up right in the pan and let them soak up all those savory flavors.

  • 1 tablespoon of soy sauce: Soy sauce is the backbone of so many Asian dishes, and here, it’s no different. You’re going to add it in and let the rice soak up that savory umami goodness. A little goes a long way!
  • 1 teaspoon of salt: Just a pinch of salt is enough to bring everything together and make all the flavors pop. It's the secret ingredient that ties it all up nicely without being too overpowering.
  • ½ teaspoon of white pepper: This adds that subtle, sharp heat that’s just right. Not too spicy, just enough to give it a little kick.

  • 1 teaspoon of chicken powder: Okay, I know it sounds a bit like a cheat, but chicken powder is pure magic when it comes to fried rice. It deepens the savory flavor and gives that rich, meaty umami without needing to add chicken or broth.
  • 1 teaspoon of sugar: A tiny bit of sugar goes a long way in balancing all the savory elements. It’s that little touch of sweetness that makes everything come together harmoniously.
  • 4 tablespoon of neutral oil: This is what’s going to help you stir-fry everything to perfection. You want something that won’t interfere with the flavors of your dish, so a neutral oil like vegetable or canola is perfect here.

Step-by-Step Guide to Making Shrimp Fried Rice

Let’s get cooking, shall we?

Marinate the Shrimp

  1. Start by marinating your shrimp with salt, white pepper, and baking soda for 10-15 minutes. This little step is so important because it tenderizes the shrimp and brings out all that sweet shrimp flavor.

Cook the Shrimp

  1. Heat up 1 tablespoon of oil in your wok or large pan over high heat. Once it's hot, toss in the shrimp and cook for 2-3 minutes until they turn that beautiful pink color. Once they're done, set them aside. You want to keep that shrimp flavor for later!

Sauté the Scallion Whites

  1. In the same pan, add 3 more tablespoon of oil and sauté the scallion whites for about 1-2 minutes. You’ll smell the magic happening! This is your savory base for the fried rice.

Scramble the Eggs

  1. Crack the eggs into a bowl, give them a quick beat, and add them to the pan. Scramble them for about 30 seconds—don’t overdo it. They’ll finish cooking once you add the rice.

Add the Day-Old Rice

  1. Now it’s time to bring in the rice! Toss in your chilled day-old rice, break up any clumps, and stir it around to coat every grain with those eggs and scallions. This is where the crispy texture starts to come together.

Add the Seasonings

  1. Time to flavor things up! Add soy sauce, chicken powder, salt, white pepper, and sugar. Stir everything together for a few minutes. You want the rice to be dry and crispy—no mushy rice here, please!

Add the Shrimp and Scallion Greens

  1. Throw the shrimp back in, along with the scallion greens. Give everything one last toss. The scallion greens will add that fresh, crunchy pop, and the shrimp will soak up all the flavors!

Garnish & Serve

  1. Finally, garnish with spring onions and a drizzle of chili oil if you like it spicy (you know I do!). Serve it hot and enjoy that crispy, flavorful goodness.

This is how you make the so-delicious shrimp fried rice on busy days quickly!
