  1. In the same skillet over medium heat, melt the butter. Stir in onion, garlic, red curry, lemongrass paste and season with salt and pepper. Cook until fragrant for 2 minutes.
  1. Stir in chicken stock, heavy cream, lime juice, sugar, fish sauce and bring the mixture to simmer.
  2. Reduce heat to low and simmer until sauce is slightly reduced and thickened.
  1. Add the chicken back to the sauce and baste the chicken with the sauce.
