What is Beef Tapa?

Beef Tapa is a popular Filipino cured beef dish. It's a savory and sweet delight, often enjoyed as part of a traditional Filipino breakfast called "Tapsilog." This delightful meal features marinated beef slices, garlic fried rice, and a sunny-side-up egg. Originating from the Philippines, Beef Tapa is a must-try for anyone who loves Filipino cuisine.

Where is it from?

Beef Tapa hails from the Philippines, a country known for its rich culinary traditions. It’s a staple in Filipino households, particularly enjoyed during breakfast.

How to Make It?

Making Beef Tapa is simple and rewarding. You marinate thin slices of beef sirloin in a mixture of soy sauce, vinegar, garlic, sugar, salt, and pepper. After marinating, cook the beef in a pan until it’s perfectly caramelized and deliciously tender.

Ingredients - Beef Tapa

Ingredients

  • Beef sirloin, thinly sliced against the grain: This cut is tender and absorbs flavors well, perfect for our beef tapa marinade.
  • Light soy sauce: Adds a salty, savory taste and helps tenderize the meat.
  • Cane vinegar: Provides a tangy kick, balancing the sweet and savory elements.
  • Brown sugar: Adds sweetness and helps caramelize the beef, giving it a nice color and flavor.
  • Minced garlic: Infuses the beef with a robust, aromatic flavor.
  • Black pepper: Adds a hint of spice, enhancing the overall taste.
  • Salt: Brings out all the other flavors and ensures the beef is well-seasoned.
  • Cooking oil: Used for frying the beef to perfection.

Serve with:

  • Garlic Fried Rice (Sinangag): Complements the beef with its savory and garlicky taste.
  • Fried Egg: Adds richness and completes the classic tapsilog breakfast.
  • Tomato: Fresh and juicy, it adds a refreshing contrast.
  • Cucumber: Crisp and cool, balancing the rich flavors of the dish.

Steps

  1. Thinly sliced the beef against the grain.
  1. Mix together with light soy sauce, cane vinegar, brown sugar, garlic, salt and pepper. Marinate for 1 hour or overnight.
  1. Then, heat the oil over medium-high heat. Once the oil is hot enough, cook the beef each side for 4-5 minutes or until browned and caramelized ( the beef will release lots of liquid and cook until the liquid has been absorbed or evaporated. The cooking is finished when the beef is browned and slightly dried on the outside)
  1. Serve with garlic fried rice (sinangag), fried egg, tomato and cucumber. Enjoy!

Tips and Tricks

Tender and Flavorful Beef Tapa

  • Slice Against the Grain: Always slice your beef sirloin against the grain. This makes the meat more tender and easier to chew.
  • Marinate Overnight: Let the beef marinate overnight for maximum flavor. The longer it sits, the better it absorbs the marinade.
  • Use Fresh Ingredients: Fresh garlic, soy sauce, and vinegar make a big difference in flavor. Avoid using pre-packaged or stale ingredients.

Storing and Freezing Tips

  • Refrigerate the Marinade: Store the marinated beef in the fridge for up to three days. Make sure it's in an airtight container.
  • Freezing for Later: You can freeze the marinated beef for up to three months. Just thaw it in the fridge overnight before cooking.

Common Mistakes to Avoid

  • Overcooking the Beef: Overcooked beef can become tough and dry. Cook on medium heat and watch closely.
  • Not Marinating Long Enough: A short marinade time won't impart as much flavor. Aim for at least four hours, preferably overnight.
  • Using Too Much Oil: A little oil goes a long way. Too much can make the dish greasy.
